Gluten-free zucchini boats

Wow, what a busy weekend, lots of events, soccer, catching up with old friends and making some new ones. I’m hoping everyone is enjoying the beautiful weather ... crisp at night and sunny during the day. Looks like a nice week ahead of us.

There are a lot of fresh vegetables out there and I’m enjoying all the zucchini my bestie pal, aka, Lovey, and Pete Dalton have given me ... lots of zucchini, green beans and more. This recipe I’m sharing with you is easy and delicious.

Grocery list: one big zuke, orange, red and yellow peppers, (you can use green but I’m not fond of green peppers), purple onion, one small eggplant, asparagus, and summer squash. When grilling the veggies, I put nothing on them but keep a close eye on them as they cook up fast. I let them cool then chop them up and put them in a bowl. I then add extra virgin olive oil, garlic salt, and pepper and mix it up ... it’s so good.

Grab a big skillet and cook one pound of Jimmy Dean sausage (you may use chicken sausage or Pinkham’s fresh ground burger; go crazy and cook what you feel like). Set the meat aside when done. Cut your zucchini in half, take out the seeds and some pulp as you want room for the goods. Add your grilled veggies into the drained sausage, heat up quickly and then turn off. Preheat your oven at 350 F. Lay your boats on parchment paper on top of a cookie sheet, throw your sauté goods on your zucchini, pack them in, then top off with your favorite cheese. I topped mine off with Parmesan. Bake for 20 to 30 minutes. Take the pan out of the oven and let it rest while you fry an egg to put on the top. OMG, so good.

Here’s the deal: These make an awesome breakfast or a fabulous brunch option. Zucchini isn’t only a dinner option any longer. Hope you enjoy them.
