Thai curry soup

    First I want to thank our awesome and wonderful girls and boys Seahawks for a wonderful season. Well done.

    I’ve been asked by a wonderful YMCA volunteer Pat for a new soup recipe and this is what I’ve come up with. I had some cooked boneless chicken breasts (I always keep my stock that’s left over from the cooked chicken for soups) left over from making chicken salad. So I thought I would make a low calorie healthy soup.

    This is what you’re going to need: three cooked chicken breasts, one onion, a red pepper, three to four cloves of fresh garlic, fresh ginger (a big chunk peeled), Thai red curry paste (one big tablespoon) one quarter of a bag of thin rice noodles, two cans of low calorie coconut milk, three to four cups of chicken stock, and one tablespoon of extra virgin olive oil.

    First, heat up your soup pan; this is done in only one good-sized soup pot. Sauté your chopped onion and red pepper and cook well. I don’t like crunch, but if you like things el dente, cook and make it your own. Then add your fresh chopped garlic and ginger and sauté for a couple more minutes. Now add half of your stock and add a big handful of your rice noodles (they only need to be simmered for about five minutes or less; you can do a little pinch test and, if soft, you’re done). Now add the rest of your stock and your two cans of low calorie coconut milk, add your shredded cooked chicken and, bam, you have a delicious soup. I added fresh cilantro to ours. Lots of people don’t like cilantro so you could top it off with fresh basil or scallion. My office peeps were very excited and absolutely loved it. Of course, my hubby stuck his nose up at it, LOL. His loss.

    I hope everyone had a nice school vacation and got some rest or had fun traveling down south for some vitamin C.

    I want to say happy birthday to our special grandson Philly. We celebrated his third birthday on the 21st of this month. He’s such a sweet, kind, and very appreciative little guy.

    My third and fourth grade girls basketball travel team is still practicing and getting ready for March madness starting this week. We are all very excited to play ball. I want to thank Joe Clark, parents and all the volunteers who keep all of our programs going.

    Not sure what’s on the menu next week. Any suggestions are always welcomed. I’m hoping we keep this 40 degree weather for a little while.
